10 ingredients
8 steps
What you need
- 1 l (1 quart) neutral vodka, 40% alcohol
- 2 sprigs fresh dill
- 1 strip of lemon peel, about 8 cm long, no white pith
- 1 strip of orange peel, about 8 cm long, no white pith
- 2 tsp caraway seeds
- 1 tsp fennel seeds
- 1 tsp coriander seeds
- 2 green cardamom pods
- 1 star anise
- 1 cinnamon stick, about 5 cm long
Method
Restated from the original video
- 1
Peel the lemon and orange with a vegetable peeler, taking only the colored zest.
- 2
Put the vodka, dill, lemon peel and orange peel in a clean 1.5 l (1 1/2 qt) glass jar. Seal and shake.
- 3
Leave the jar at room temperature, out of direct light, for 24 h.
- 4
Lightly crush the caraway, fennel, coriander and cardamom in a mortar, just enough to crack them.
- 5
Lift the dill and peels out of the jar. Add the crushed spices, star anise and cinnamon.
- 6
Seal and steep for 3-5 days, shaking once a day. Taste from day 3 and strain once the caraway leads and nothing tastes bitter.
- 7
Strain through a fine sieve lined with muslin into a clean bottle.
- 8
Store in the freezer. Serve ice cold in small glasses, 30-50 ml (1-1 1/2 fl oz) per person.
