15 ingredients

10 steps

What you need

  • 600 g (1 1/3 lb) ground beef
  • 1 small onion, finely grated
  • 2 tbsp potato starch
  • 150 ml (2/3 cup) whole milk
  • 2 tsp salt, plus extra for the potatoes
  • 1/2 tsp black pepper, freshly ground
  • 1/4 tsp nutmeg, freshly grated
  • 1/4 tsp ground ginger
  • 70 g (5 tbsp) butter, divided
  • 40 g (5 tbsp) all-purpose flour
  • 600 ml (2 1/2 cups) beef stock
  • 2 tbsp heavy cream
  • 1 tsp dark soy sauce
  • 800 g (1 3/4 lb) waxy potatoes, peeled
  • 4 tbsp lingonberry jam, for serving

Method

Restated from the original video

  1. 1

In a large bowl, combine the beef, onion, starch, salt, pepper, nutmeg and ginger.

  2. 2

Add the milk a little at a time, mixing with your hand for about 2 min, until the mixture is soft, sticky and clearly holds together. Chill for 15 min.

  3. 3

Wet your hands and shape the mixture into 8 oval patties about 2 cm (3/4 in) thick.

  4. 4

Cut the potatoes into even chunks and put them in a pot of cold water with a good pinch of salt. Bring to a boil and cook until a knife slides in easily, 18-20 min. Drain and keep warm.

  5. 5

Melt 30 g of the butter in a large frying pan over medium heat. Fry the patties in two batches, 3 min per side, until well browned. They finish cooking in the gravy. Move them to a plate.

  6. 6

In a wide pan, melt the remaining 40 g butter over medium heat. Cook, stirring, until it smells nutty and turns light brown, 2-3 min.

  7. 7

Whisk in the flour and cook for 2-3 min, until the paste turns golden brown. Watch the heat so it does not burn.

  8. 8

Pour in the stock gradually, whisking until smooth. Stir in the cream and soy sauce and simmer for 5 min.

  9. 9

Slide the patties into the gravy, cover and simmer over low heat for 15 min, turning once, until cooked through to 71 °C (160 °F) with no pink in the middle. Do not stir, or the gravy turns cloudy.

  10. 10

Serve the patties with gravy, the potatoes and a spoonful of lingonberry jam.
