Restated from the original video
- 1
Whisk both flours with the yeast, 40 g of the sugar and the salt in a large bowl.
- 2
Add the milk, egg and melted butter. Stir until a shaggy dough forms.
- 3
Knead on a lightly floured surface for 8-10 min, until smooth and slightly tacky.
- 4
Place in an oiled bowl, cover and leave somewhere warm until doubled, 1 h to 1 h 15 min.
- 5
Mix the remaining 60 g sugar with the cinnamon in a shallow dish.
- 6
Pour the oil into a wide, heavy pan and heat to 175 °C (350 °F).
- 7
Divide the dough into 6 pieces. With oiled hands, stretch each into a flat oval about 18 cm (7 in) long and 6 mm (1/4 in) thick.
- 8
Fry one at a time, 1-2 min per side, turning once, until deep golden and blistered.
- 9
Drain on a rack for a few seconds, then press both sides into the cinnamon sugar while hot.
- 10
Serve immediately.
