Hawaiian Shave Ice with Strawberry and Lime Syrups

8 ingredients

13 steps

What you need

  • 450 g (1 lb) strawberries, hulled and quartered
  • 170 g (3/4 cup + 2 tbsp) granulated sugar, divided: 70 g for the strawberry syrup, 100 g for the lime syrup
  • 240 ml (1 cup) water, divided
  • 60 ml (1/4 cup) lime juice, from 2-3 limes
  • 1 tsp lime zest, finely grated
  • 1 kg (2 lb) block ice, frozen solid in a tub the day before, for shaving
  • 4 tbsp sweetened condensed milk, for the snow cap
  • 4 small scoops vanilla ice cream, optional, for the bottom of each cup

Method

Restated from the original video

  1. 1

For the strawberry syrup, put the strawberries, 70 g of the sugar and 120 ml of the water in a small saucepan over medium heat.

  2. 2

Simmer, pressing the strawberries with a spoon now and then, until they break down and the liquid turns deep red, about 10 min.

  3. 3

Pour through a fine sieve, pressing lightly, and discard the pulp. Leave the strawberry syrup thin and pourable; it should run off a spoon like juice.

  4. 4

For the lime syrup, warm the remaining 100 g sugar and 120 ml water in a second pan, stirring, just until the sugar dissolves, 2-3 min.

  5. 5

Take the pan off the heat and stir in the lime juice and zest.

  6. 6

Chill both syrups until cold, at least 30 min. Cold syrup soaks in without melting the ice.

  7. 7

Chill four cups or bowls in the freezer while the syrups cool.

  8. 8

If using ice cream, put a small scoop in the bottom of each cup.

  9. 9

Shave the ice with a shave ice machine or a block shaver into fine, fluffy flakes like fresh snow, not crushed chips.

  10. 10

Pile the shaved ice loosely into each cup, then press gently with cupped hands into a round dome that rises well above the rim.

  11. 11

Pour the strawberry syrup slowly over one half of each dome and the lime syrup over the other half, letting each pour sink in before adding more. Use about 3 tbsp in total per serving.

  12. 12

Drizzle 1 tbsp of the condensed milk over the top of each dome as a snow cap.

  13. 13

Serve right away with a spoon and a straw for the syrup that pools at the bottom.
