- 1/2 tsp cumin, ground
- salt and black pepper, to taste
- 600 g (1 1/3 lb) yellow potatoes, peeled
- 1 l (4 cups) vegetable oil, for deep-frying, plus 3 tbsp for the wok
- 1 large red onion, cut into thick wedges
- 3 cloves garlic, chopped
- 1 tbsp ají amarillo paste, or 1 fresh ají amarillo, seeded and cut into strips

- 1 tbsp red wine vinegar
- 2 tbsp soy sauce
- 2 tbsp cilantro, chopped
- cooked white rice, to serve
Method
Restated from the original video
- 1
Season the beef with the cumin and a good pinch of salt and pepper. Set aside while you make the fries.
- 2
Cut the potatoes into thick fries, rinse them and pat them very dry.
- 3
Heat the deep-frying oil in a heavy pot to 175 °C (350 °F). Fry the potatoes in batches until golden and crisp, 8-10 min. Drain on paper towels, salt them and keep warm in a low oven.
- 4
Heat a wok or large frying pan over the highest heat until it smokes, then add 1 1/2 tbsp of the oil.
- 5
Sear half of the beef in a single layer, untouched for 1 min, then toss until browned outside but still pink in the middle, 1 min more. Lift it out and repeat with the rest.
- 6
Add the remaining oil and the onion wedges and stir-fry for 2 min, until charred at the edges but still crunchy.
- 7
Stir in the garlic and ají amarillo and cook for 30 seconds.
- 8
Add the tomatoes and toss for 1 min, just until they start to soften.
- 9
Pour the vinegar and soy sauce around the hot edge of the wok and let them sizzle for a few seconds.
- 10
Return the beef with its juices, toss everything together for 30 seconds and turn off the heat. Stir in the cilantro.
- 11
Spoon the beef and its juices over the fries, or toss some fries into the wok at the last moment, and serve with rice on the side.
