4 ingredients
9 steps
What you need
- 250 g (9 oz) blanched almonds, finely ground
- 250 g (2 cups) icing sugar, sifted, plus extra for dusting
- 2 tbsp rose water, plus a few drops if needed
- 1/4 tsp almond extract, optional
Method
Restated from the original video
- 1
Sift the icing sugar into a large bowl.
- 2
Add the ground almonds and stir until the mixture is one even color.
- 3
Sprinkle in the rose water and almond extract. Stir with a spoon until the crumbs start to clump.
- 4
Tip the mixture onto a surface dusted with icing sugar and press it together with your hands.
- 5
Knead for 3-5 min until the dough is smooth and holds together without cracks.
- 6
If the dough crumbles, work in a few drops of rose water. If it sticks, dust it with a little more icing sugar.
- 7
Shape the dough into a thick log and wrap it tightly in plastic wrap.
- 8
Chill for at least 1 hour so the dough firms up and the flavors settle.
- 9
Cut off pieces and roll them into balls, or press them into small molds. Keep covered in the fridge for up to 1 week.
