9 ingredients
14 steps

What you need
- 180 g (1 3/4 cups) graham cracker crumbs, about 15 whole crackers
- 85 g (6 tbsp) unsalted butter, melted
- 2 tbsp granulated sugar, for the crust
- 1 pinch salt
- 900 g (2 lb) full-fat cream cheese, 4 blocks, at room temperature
- 250 g (1 1/4 cups) granulated sugar, for the filling
- 120 g (1/2 cup) sour cream, at room temperature
- 2 tsp vanilla extract
- 4 large eggs, at room temperature
Method
Restated from the original video
- 1
Heat the oven to 175 °C (350 °F). Wrap the outside of a 23 cm (9 in) springform pan with two layers of heavy foil so no water can seep in.
- 2
Stir the crumbs, melted butter, 2 tbsp sugar and the salt together until the mix looks like damp sand.
- 3
Press it firmly over the base of the pan and a little way up the sides.
- 4
Bake the crust until lightly golden, 8-10 min. Set it aside to cool while the filling is made.
- 5
Beat the cream cheese with the remaining sugar on medium speed until completely smooth, 4-5 min. Scrape the bowl twice.
- 6
Turn the mixer to low and mix in the sour cream and vanilla.
- 7
Add the eggs one at a time on low speed, stopping as soon as each one disappears. Too much beating adds air and cracks the top.
- 8
Pour the filling onto the crust, smooth it and tap the pan on the counter to pop large bubbles.
- 9
Stand the pan in a roasting tin and pour in boiling water to about 2 cm (3/4 in) up the sides.
- 10
Bake until the edges are set and only the middle 5-8 cm (2-3 in) still wobbles when nudged, 60-75 min.
- 11
Switch off the oven, prop the door open a crack and leave the cheesecake inside for 45-60 min.
- 12
Lift it out of the water, remove the foil and run a thin knife around the edge.
- 13
Cool to room temperature on a rack, then cover loosely and refrigerate for at least 6 h, or overnight.
- 14
Release the ring and slice with a knife dipped in hot water and wiped between cuts.
