Method
Restated from the original video
- 1
Preheat the oven to 175 °C (350 °F). Grease a 23 x 33 cm (9 x 13 in) baking dish with butter.
- 2
Sift the flour together with the baking powder and salt.
- 3
Separate the eggs, putting the yolks in a large bowl and the whites in a clean, grease-free one.
- 4
Beat the yolks with 150 g of the sugar until thick and pale, about 2 min. Stir in the 80 ml milk and 1 tsp of the vanilla.
- 5
Whisk the whites to soft peaks. Add the remaining 50 g sugar a little at a time and whisk until stiff and glossy, about 1 min more.
- 6
Gently fold the flour mixture into the yolks with a spatula, then fold in the whites in three additions, keeping as much air as possible.
- 7
Spread the batter in the dish and bake until golden and a skewer in the center comes out clean, 30-35 min.
- 8
Let the cake cool completely in the dish, about 1 hour.
- 9
Whisk the evaporated milk, condensed milk and the 120 ml milk together in a jug.
- 10
Prick the cake all over with a fork, right into the corners.
- 11
Pour the milk mixture slowly over the cake, pausing so it can soak in, until all of it is absorbed.
- 12
Cover and refrigerate for at least 3 hours, or overnight.
- 13
Whip the cold cream with 2 tbsp sugar and the remaining vanilla until it holds soft, spreadable peaks.
- 14
Spread the cream over the cake, dust lightly with cinnamon and serve cold, cut into squares.
