12 steps
What you need
- 450 g (3 1/2 cups) plain flour, plus extra for dusting

- 1 tsp salt
- 400 ml (1 2/3 cups) buttermilk, plus a splash more if needed
Method
Restated from the original video
- 1
Heat the oven to 230 °C (450 °F) and dust a baking sheet with flour.
- 2
Sift the flour, baking soda and salt into a large bowl and make a well in the middle.
- 3
Pour in most of the buttermilk.
- 4
Using a fork or the fingers of one hand spread like a claw, draw the flour into the liquid in wide circles.
- 5
Add the rest of the buttermilk if dry patches remain. The dough should be soft and quite sticky.
- 6
Stop as soon as there is no loose flour. Overmixing makes the bread tough.
- 7
Tip onto a floured surface and turn it over once or twice to neaten, without kneading.
- 8
Pat it into a round about 4 cm (1 1/2 in) high and move it to the baking sheet.
- 9
Cut a deep cross across the top with a floured knife, almost to the edges.
- 10
Bake for 15 min, then lower the oven to 200 °C (400 °F) and bake until deep golden, 25-30 min more.
- 11
Tap the base. It should sound hollow; if not, return it to the oven for 5 min.
- 12
Let it rest on a rack, wrapped in a clean tea towel for a softer crust, for 20 min or more before cutting.
