Restated from the original video
- 1
Heat the oven to 200 °C (400 °F). Brush a little of the melted butter over a 25 x 35 cm (10 x 14 in) baking dish.
- 2
Stir the sugar into the water in a pot over medium heat until it dissolves, then bring to a boil.
- 3
Simmer for 15 min, until the syrup lightly coats a spoon. Stir in the lemon juice, simmer 2 min more and leave to cool completely.
- 4
Put the kadayif in a large bowl and pull the strands apart with your fingers.
- 5
Pour the rest of the melted butter over the strands and rub it in until every strand is coated.
- 6
Wrap the walnuts in a clean towel and crush them coarsely with a rolling pin.
- 7
Press half of the strands into the dish in an even layer.
- 8
Scatter the walnuts over the top.
- 9
Cover with the remaining strands and press down firmly.
- 10
Bake until golden brown, 30-35 min.
- 11
Pour the cooled syrup slowly over the hot kadayif. It will sizzle.
- 12
Leave to soak up the syrup for at least 20 min, then cut into squares.
