- 200 g (7 oz) firm tofu, cut into 2 cm cubes
- 400 g (14 oz) napa cabbage
- 1 carrot, thinly sliced on the diagonal
- 150 g (5 oz) sliced bamboo shoots, drained
- 100 g (3 1/2 oz) snow peas, trimmed
- 3 tbsp vegetable oil
- 2 cloves garlic, sliced

Method
Restated from the original video
- 1
Soak the shiitake in 300 ml (1 1/4 cups) hot water for 30 min. Soak the wood ear in a separate bowl of warm water for 20 min.
- 2
Soak the noodles in warm water for 10 min, drain and cut them into shorter lengths with scissors.
- 3
Squeeze the shiitake over their bowl and keep 250 ml (1 cup) of the soaking liquid. Cut off the stems and halve the caps.
- 4
Drain the wood ear, trim away any hard knobs and tear it into bite-sized pieces.
- 5
Cut the cabbage into 3 cm pieces, keeping the thick white stems apart from the leafy tops.
- 6
Stir the reserved mushroom liquid with the soy sauce, vegetarian oyster sauce, sugar and cornstarch.
- 7
Pat the tofu dry. Heat 2 tbsp of the oil in a wok over medium-high heat and fry the tofu, turning, until golden on several sides, 6-8 min. Lift it out.
- 8
Add the remaining oil with the garlic and ginger and stir for 20 seconds until fragrant.
- 9
Add the shiitake, carrot and cabbage stems and stir-fry for 2 min.
- 10
Add the wood ear, bamboo shoots and cabbage leaves and stir-fry until the leaves wilt, about 2 min.
- 11
Give the sauce a stir and pour it in, then add the tofu and noodles. Cover and simmer until the cabbage is tender and the noodles have absorbed some of the sauce, 4-5 min.
- 12
Add the snow peas and cook uncovered until bright green and the sauce turns glossy, 1-2 min.
- 13
Drizzle with the sesame oil, taste, add salt if needed and serve hot.
