7 ingredients
11 steps
What you need
- 1.2 kg (2 2/3 lb) whole chicken, cut into 8 pieces, skin on
- 6 dried shiitake mushrooms, soaked in warm water for 30 min
- 8 dried red dates, rinsed and slit open
- 4 slices fresh ginger, thick
- 2 tbsp dried goji berries, rinsed
- 2 l (8 cups) water
- 1 1/2 tsp salt, to taste
Method
Restated from the original video
- 1
Soak the shiitake in warm water until soft, about 30 min. Squeeze them dry, trim off the stems and keep the soaking water.
- 2
Put the chicken pieces in a large pot, cover with cold water and bring to a boil over high heat.
- 3
Boil for 3 min, skimming off the grey foam.
- 4
Drain the chicken and rinse the pieces under running water to remove scum. Wash the pot.
- 5
Return the chicken to the clean pot with the ginger, red dates and shiitake.
- 6
Add the 2 l of fresh water and pour in the soaking water, leaving the last gritty spoonful behind.
- 7
Bring to a boil, skim again, then cover and reduce to the lowest heat so the surface only trembles.
- 8
Simmer for 1 1/2 hours.
- 9
Add the goji berries and simmer for 30 min more, until the chicken is falling-tender and a thigh reads 74 °C (165 °F).
- 10
Season with the salt. Taste and add a little more if needed.
- 11
Ladle into bowls with a piece of chicken, mushrooms, dates and berries in each. Serve hot.
