Golden Grilled Halloumi with Lemon and Fresh Oregano
5 ingredients
8 steps
What you need
- 250 g (9 oz) halloumi
- 1 tbsp olive oil
- 1 lemon, half cut into wedges, half for juice
- 1 tbsp fresh oregano, leaves picked
- black pepper, freshly ground, to taste
Method
Restated from the original video
- 1
Lift the halloumi out of its brine and pat it very dry with paper towels. Wet cheese steams and will not brown.
- 2
Cut the block into slices about 1 cm (1/2 in) thick.
- 3
Heat a grill pan, griddle or barbecue over medium-high heat until very hot.
- 4
Brush both sides of the slices lightly with the olive oil.
- 5
Lay the slices on the grill without crowding. Cook until the underside has deep golden marks, 2-3 min.
- 6
Flip the slices and cook until the second side is golden and the cheese feels soft, 1-2 min.
- 7
Move to a warm plate, squeeze the juice of half the lemon over the top and scatter with the oregano.
- 8
Finish with black pepper and serve at once with the remaining lemon wedges. Halloumi turns rubbery as it cools.
