Method
Restated from the original video
- 1
Mix the pork with half of the turmeric, half of the garlic and shallots, 1 tbsp fish sauce, a pinch of salt and pepper. Leave for 30 min.
- 2
Toss the prawns with a pinch of turmeric, the sugar and 1 tsp fish sauce. Leave for 15 min.
- 3
Heat the oil in a wide pot over medium heat. Fry the remaining garlic and shallots until fragrant, 1 min.
- 4
Add the pork and cook, turning, until lightly browned on all sides, 5 min.
- 5
Stir in the remaining turmeric, then pour in the water and bring to a boil. Skim off the foam.
- 6
Simmer gently, partly covered, for 30 min until the pork is soft, then stir in the rest of the fish sauce and the salt.
- 7
Lift the pork out and cut it into thin pieces. Leave the broth simmering on low heat until it reduces to just enough to moisten the noodles.
- 8
Drop the prawns into the broth and cook until pink and cooked through, 3 min. Lift them out.
- 9
Blanch the noodles in boiling water for 1 min, then drain well.
- 10
Divide the noodles among 4 bowls. Add a few spoonfuls of broth, then top with the pork, prawns and eggs.
- 11
Scatter over the lettuce, bean sprouts and mint, then the peanuts and crackers.
- 12
Serve with lime wedges and chilies. Toss everything together at the table and squeeze lime over the bowl.
