- 6 shallots, peeled
- 4 cloves garlic, peeled
- 2 cm (3/4 in) fresh ginger, peeled

Method
Restated from the original video
- 1
Blend or pound the shallots, garlic and ginger to a fine paste.
- 2
Heat the oil in a heavy pot over medium heat. Fry the paste with the cloves and cinnamon stick until fragrant and lightly golden, 3-4 min.
- 3
Add the beef and stir until the outside is no longer pink, 4-5 min.
- 4
Sprinkle in the nutmeg and white pepper, then pour in the kecap manis and stir to coat the meat.
- 5
Pour in the water and bring to a boil.
- 6
Reduce the heat, cover and simmer gently until the beef is nearly tender, about 1 hour.
- 7
Add the potatoes and simmer, partly covered, until they are soft and the beef is tender, 25-30 min.
- 8
Add the tomato wedges and cook for 5 min more. The sauce should be glossy and slightly reduced. If it is thin, uncover and boil it down for a few minutes.
- 9
Taste and add salt if needed. Remove the cinnamon stick.
- 10
Let the pot rest off the heat for 10 min, then serve with steamed rice.
