12 steps

What you need

  • 400 g (14 oz) bread flour, or all-purpose flour
  • 1 egg, for the dough
  • 200 ml (3/4 cup) water
  • 40 g (1 1/2 oz) butter, melted
  • 1 tsp sugar
  • 1 tsp salt, for the dough
  • 5 tbsp vegetable oil, plus more for the pan
  • 300 g (10 oz) ground beef
  • 2 medium onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp meat curry powder
  • 1 tsp salt, for the filling
  • 2 stalks scallions, thinly sliced
  • 4 large eggs, for the filling

Method

Restated from the original video

  1. 1

Mix the flour, sugar and the 1 tsp salt for the dough in a large bowl. Add the egg, melted butter and water.

  2. 2

Knead for 8-10 min into a smooth, soft dough that is slightly tacky.

  3. 3

Divide the dough into 4 balls and coat each with 1 tbsp of the oil. Put them in an oiled container, cover and rest for at least 1 hour.

  4. 4

Make the filling: warm 1 tbsp of oil in a skillet over medium heat and soften half of the onion with the garlic and ginger, about 5 min.

  5. 5

Add the beef and break it up with a spoon. Cook until browned and cooked through, with no pink left, 6-8 min.

  6. 6

Stir in the curry powder and the filling salt and cook for 1 min. Spread on a plate and cool completely, then mix in the scallions.

  7. 7

Beat the eggs in a bowl and stir in the cooled beef and the remaining onion. Divide into 4 portions.

  8. 8

Oil your work surface and hands. Press one dough ball flat, then stretch it by hand into a thin square about 30 cm (12 in) wide, until you can nearly see through it.

  9. 9

Heat a griddle or large non-stick pan over medium heat with a little oil. Lay the dough on it and spoon one portion of filling into the center.

  10. 10

Fold the four sides over the filling, overlapping them in the middle to make a closed square parcel.

  11. 11

Cook until the underside is deep golden and crisp, 3-4 min. Flip, add a little more oil and cook the second side until the egg inside is fully set, another 3-4 min.

  12. 12

Repeat with the remaining dough balls. Cut into squares and serve hot.
