12 ingredients

11 steps

What you need

  • 300 g (10 oz) pork loin, cut into 2 boneless chops, about 1.5 cm (1/2 in) thick
  • 30 g (1/4 cup) all-purpose flour
  • 1 large egg, beaten
  • 50 g (1 cup) panko breadcrumbs
  • 500 ml (2 cups) neutral oil, for frying
  • 120 g (2 cups) green cabbage, cored
  • 20 g (1 1/2 tbsp) butter, softened
  • 1 tsp karashi mustard, Japanese hot mustard, or English mustard
  • 4 slices soft white sandwich bread, thick-cut, such as shokupan
  • 4 tbsp tonkatsu sauce
  • salt, to taste, for the pork
  • black pepper, freshly ground, to taste

Method

Restated from the original video

  1. 1

Snip the strip of fat along the edge of each pork loin chop in 3-4 places so the meat stays flat when it fries.

  2. 2

Pound the chops between two sheets of plastic wrap to an even thickness of about 1 cm (1/2 in). Season both sides with salt and black pepper.

  3. 3

Set out three shallow dishes: flour in the first, beaten egg in the second, panko in the third.

  4. 4

Coat each chop in flour and shake off the excess. Dip it in the egg, let the extra drip off, then press it firmly into the panko on both sides. Rest the chops on a rack for 5 min so the crumbs set.

  5. 5

Shred the cabbage as finely as possible. Soak it in cold water for 5 min, then drain and dry it very well.

  6. 6

Mash the butter with the karashi mustard until smooth.

  7. 7

Pour the oil into a wide, heavy pan to a depth of about 2.5 cm (1 in) and heat it to 175 °C (350 °F). A pinch of panko should sizzle at once.

  8. 8

Fry the chops 3 min per side, until deep golden and the pork reaches 63 °C (145 °F) inside. Lift them onto a rack and rest for 3 min.

  9. 9

Toast the bread lightly. Spread the mustard butter on one side of every slice.

  10. 10

Brush both sides of each cutlet with tonkatsu sauce. Lay a cutlet on two slices of bread, pile the cabbage on top and close with the remaining slices.

  11. 11

Press the sandwiches down gently for 1 min. Trim off the crusts with a serrated knife and cut each sandwich in half. Serve right away.
