Method
Restated from the original video
- 1
Put the neck bones and pork belly in a large pot, cover with cold water and bring to a boil. Boil for 5 min, then drain and rinse the pork and the pot.
- 2
Place the onion halves cut side down in a dry pan over high heat. Char until blackened, about 5 min.
- 3
Toast the dried shrimp in the same pan for 1-2 min, until fragrant.
- 4
Return the pork to the pot with 3 l (3 qt) of cold water, the onion, dried shrimp, daikon, rock sugar and salt.
- 5
Bring to a bare simmer, skim off the foam, and cook for 1 h 30 min, until the belly is tender and the broth tastes sweet.
- 6
Lift out the belly and let it cool for 10 min, then slice thin. Pull the meat off the neck bones and shred it.
- 7
Strain the broth and discard the bones, onion and dried shrimp. Slice the daikon.
- 8
Season the broth with the fish sauce, white pepper and more salt to taste. Keep it at a gentle simmer.
- 9
Fry the garlic in the oil over medium-low heat until pale gold, 2-3 min. Do not let it brown. Save the garlic and its oil.
- 10
Boil the noodles for 2-3 min, until just tender. Drain and divide among four bowls.
- 11
Drop the shrimp into the simmering broth for 1-2 min, until pink and curled. Lift out with a slotted spoon.
- 12
Top the noodles with the sliced belly, shredded pork, daikon, shrimp and bean sprouts. Ladle over the boiling broth.
- 13
Finish with the garlic and its oil, scallions and cilantro. Serve with lime and chilies on the side.
