11 steps
What you need
- 500 g (1 lb 2 oz) pork neck, in one thick piece, about 3 cm (1 1/4 in)
- 3 tbsp fish sauce, 1 tbsp for the marinade, 2 tbsp for the dressing
- 2 tsp sugar, 1 tsp for the marinade, 1 tsp for the dressing
- 1/2 tsp white pepper, ground
- 1 bunch cilantro, about 40 g, roots and stems chopped for the marinade, leaves kept whole
- 2 tbsp raw glutinous rice
- 3 shallots, thinly sliced
- 3 scallions, cut into thin rings
- 1 handful mint leaves
- 3 tbsp lime juice, from about 2 limes
- 2 tsp dried chili flakes, or to taste
- 8 leaves lettuce, for serving
- 1 cucumber, sliced, for serving
Method
Restated from the original video
- 1
Separate the cilantro leaves from the stems and roots. Chop the stems and roots finely.
- 2
Mash the chopped cilantro stems with 1 tbsp of the fish sauce, 1 tsp of the sugar and the white pepper. Rub the paste over the pork neck and leave it for 20 min.
- 3
Toast the glutinous rice in a dry frying pan over medium heat, shaking often, until deep golden and nutty, 4-5 min.
- 4
Grind the toasted rice in a mortar or spice grinder to a coarse powder with some texture left. Set aside.
- 5
Heat a grill or a cast-iron grill pan over medium-high heat. Cook the pork 7-9 min per side, turning once, until charred in spots and 63 °C (145 °F) in the center.
- 6
Move the pork to a board and rest it for 10 min, keeping any juices.
- 7
Slice the pork across the grain into strips about 3 mm thick. Put the strips and the resting juices in a large bowl.
- 8
Stir the lime juice, the remaining 2 tbsp fish sauce, the remaining 1 tsp sugar and the chili flakes in a small bowl until the sugar dissolves. Taste: it should be sour first, then salty and hot.
- 9
Pour the dressing over the pork, add the ground rice and toss well.
- 10
Add the shallots, scallions, mint and cilantro leaves. Toss lightly so the herbs stay whole.
- 11
Pile the salad on a platter and serve at once with lettuce leaves and cucumber slices on the side.
