  • 13 garlic cloves, 8 roughly chopped, 5 peeled whole
  • 3 coriander roots, or a small handful of coriander stems
  • 1 tsp ground white pepper, plus more to serve
  • 200 g (1 cup) jasmine rice, rinsed
  • 2 l (8 cups) chicken stock, light, low-salt
  • 200 g (7 oz) minced pork
  • 3 tsp fish sauce, plus more to serve
  • 1 tbsp light soy sauce
  • 2 stalks Chinese celery, or 1 celery stalk, chopped
  • 1 piece ginger, 3 cm (1 1/4 in), finely julienned
  • 3 spring onions, thinly sliced
  • 1 handful coriander leaves, roughly chopped

Method

Restated from the original video

  1. 1

For the garlic oil, warm the oil in a small pan on medium. Fry the 8 chopped garlic cloves gently, stirring, until they just start to turn golden, about 2 min. Pour into a heatproof bowl right away, as the garlic keeps darkening.

  2. 2

Pound 3 of the whole garlic cloves with the coriander roots in a mortar into a rough paste.

  3. 3

Spoon 2 tbsp of the garlic oil into a large pot over medium heat and fry the paste until fragrant, 30 seconds. Add the white pepper and rice and stir for 30 seconds to coat the grains.

  4. 4

Pour in the stock, bring to a boil, then lower the heat and simmer, partly covered, until the rice grains have burst and softened, 15-20 min. The soup should stay brothy.

  5. 5

Meanwhile, pound the remaining 2 whole garlic cloves to a paste and mix with the pork and 1 tsp of the fish sauce.

  6. 6

Season the soup with the rest of the fish sauce and the light soy sauce.

  7. 7

Drop the pork into the simmering soup in teaspoon-sized balls. Add the celery and cook until the balls float and are cooked through, 4-5 min.

  8. 8

Ladle into bowls and top with the ginger, spring onions and coriander leaves.

  9. 9

Serve with the garlic oil, extra fish sauce and white pepper for each person to add at the table.
