Stovetop Masala Chai with Ginger and Cardamom

9 ingredients

8 steps

What you need

  • 500 ml (2 cups) water
  • 2 tsp loose black tea, Assam or similar strong tea
  • 2.5 cm (1 in) fresh ginger, thinly sliced
  • 2 green cardamom pods
  • 1 whole clove
  • 1/4 tsp black peppercorns
  • 1/2 cinnamon stick
  • 240 ml (1 cup) whole milk
  • 2 tsp sugar, or to taste

Method

Restated from the original video

  1. 1

Lightly crush the cardamom, clove, peppercorns and cinnamon in a mortar.

  2. 2

Put the water in a small saucepan with the crushed spices and the ginger and bring it to a boil.

  3. 3

Add the tea, turn the heat to medium-low and simmer until the liquid turns a deep reddish brown, about 2 min.

  4. 4

Pour in the milk and raise the heat to high. Let the chai boil until it foams up the sides of the pan.

  5. 5

Pull the pan off the heat until the foam sinks, then return it and let it rise once more.

  6. 6

Lower the heat and simmer gently until the chai looks creamy and caramel coloured, 4-6 min.

  7. 7

Strain into cups through a fine sieve.

  8. 8

Stir in the sugar to taste and serve hot.

About masala chai

Black tea boiled with milk, ginger, cardamom, and sugar until the liquid turns deep amber and strongly spiced. Stronger and sweeter than plain milk tea, drunk throughout the day.

What cooks argue about

Cooks argue over boiling the tea leaves and milk together, which extracts more tannin and color but risks bitterness, against steeping the tea first and adding milk after, gentler but lighter in the end.
