Restated from the original video

  1. 1

Heat the oven to 180 °C (350 °F). Butter a 22 cm (9 in) round cake pan and dust it with flour.

  2. 2

Toss the apples with the lemon juice in a bowl.

  3. 3

Whisk the eggs with the sugar until pale and thick, 3-4 min.

  4. 4

Beat in the melted butter, milk and lemon zest.

  5. 5

Mix the flour, baking powder and salt, then fold into the batter until just combined.

  6. 6

Fold in two-thirds of the apples. Scrape the batter into the pan and level the top.

  7. 7

Arrange the remaining apple slices over the top in overlapping circles and sprinkle with 1 tbsp sugar.

  8. 8

Bake for 45-50 min, until golden and a skewer in the center comes out clean.

  9. 9

Cool in the pan for 15 min, then unmold. Dust with icing sugar and serve warm or at room temperature.
