Restated from the original video
- 1
Grease a 20 cm (8 in) square pan and lay a sheet of parchment in it, with two sides hanging over the edge.
- 2
Stir the cornstarch into the water in a small bowl until completely smooth.
- 3
Pour the coconut milk into a saucepan, add the sugar and set it over medium heat. Whisk until it barely starts to simmer.
- 4
Lower the heat and slowly pour in the cornstarch mixture, whisking all the time.
- 5
Keep whisking over low heat until the mixture is very thick and no longer sticks to the pan walls, 10-15 min.
- 6
Scrape it into the pan and smooth the top.
- 7
Cool for 15 min at room temperature, then chill for 2 hours, until firm.
- 8
Lift the haupia out by the parchment and cut it into 9 squares. Sprinkle with the coconut flakes and serve cold.
