What you need
- 1 small onion, finely diced, about 120 g (4 oz)
- 225 g (8 oz) ground beef
- 225 g (8 oz) ground pork
- 25 g (1/2 cup) panko, for the meat mix
- 2 large eggs, 1 for the meat mix, 1 for the coating
- 1 tbsp tomato ketchup
- 1 tsp Worcestershire sauce
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 1 pinch white pepper
- 30 g (1/4 cup) all-purpose flour
- 100 g (2 cups) panko, for coating
- 1 l (4 cups) neutral oil, about 1 tbsp for the onion, the rest for deep frying
- 200 g (7 oz) white cabbage, finely shredded, for serving
- 4 tbsp tonkatsu sauce, for serving
Method
Restated from the original video
- 1
Fry the onion in 1 tbsp of the oil over medium heat until soft and lightly golden, 4-5 min. Tip it into a large bowl and cool for 10 min.
- 2
Add the beef, pork, 25 g (1/2 cup) of the panko, one egg, ketchup, Worcestershire sauce, nutmeg, salt and white pepper.
- 3
Knead with your hand for 2 min until the mixture turns sticky and holds together.
- 4
Divide into 8 portions. Toss each one from hand to hand a few times to knock out air, then shape into an oval patty 2 cm (3/4 in) thick.
- 5
Beat the second egg with 2 tbsp of water in a shallow dish. Put the flour and the remaining panko in two more dishes.
- 6
Dredge each patty in the flour and shake off the excess. Dip it in the egg, then press it into the panko until fully coated.
- 7
Chill the coated patties on a plate for 30 min so the coating sticks.
- 8
Pour oil 4 cm (1 1/2 in) deep into a heavy pot and heat it to 170 °C (340 °F).
- 9
Fry 2 or 3 patties at a time, turning now and then, until deep golden and cooked through, 6-7 min. The inside should reach 71 °C (160 °F) with no pink left.
- 10
Drain on a rack or paper towels and keep warm in a low oven while you fry the rest.
- 11
Serve with the cabbage and the tonkatsu sauce.
