Method
Restated from the original video
- 1
Heat the oven to 175 °C (350 °F). Grease two 20 cm (8 in) round cake pans and line the bottoms with baking paper.
- 2
Whisk the flour, baking powder and fine salt together in a bowl.
- 3
Beat the 113 g of butter with the granulated sugar in a stand mixer on medium speed until pale and fluffy, 2-3 min.
- 4
Beat in the eggs individually, letting each disappear into the batter before the next goes in. Then beat in the 1 tbsp of vanilla.
- 5
Stir the milk and oil together in a jug.
- 6
With the mixer on low, add the dry mix in 3 parts, alternating with the milk mixture in 2 parts. Mix only until no dry streaks remain.
- 7
Divide the batter evenly between the pans and smooth the tops.
- 8
Bake until the tops spring back when pressed and a skewer in the middle comes out clean, 20-25 min.
- 9
Cool in the pans for 10 min, then turn the layers out onto a wire rack and leave until completely cold, about 1 hour.
- 10
For the buttercream, beat the 340 g of butter on medium-high until very pale and creamy, about 5 min.
- 11
Add the powdered sugar a little at a time on low speed, then the 2 tsp of vanilla and the pinch of salt.
- 12
Pour in the cream a spoonful at a time and whip on high until light and fluffy, 3-5 min. Tint with the food coloring if using.
- 13
Trim any domed tops level. Set one layer on a plate, spread it with a thick layer of buttercream and place the second layer on top, cut side down.
- 14
Cover the top and sides with a thin coat of buttercream and chill for 20 min to set the crumbs.
- 15
Spread the rest of the buttercream over the cake in an even layer and finish with the sprinkles.
