Method

Restated from the original video

  1. 1

Heat the oven to 175 °C (350 °F) with a rack in the middle. Line two baking sheets with parchment.

  2. 2

Cover the raisins with warm water and leave for 15 min. Drain and pat them dry.

  3. 3

In a bowl, combine the flour with the salt, cinnamon, baking powder and baking soda, whisking to mix.

  4. 4

Using medium-high speed, cream the butter with the granulated sugar and brown sugar until pale and fluffy, 2-3 min.

  5. 5

Beat in the egg and vanilla until fully blended.

  6. 6

On low speed, add the flour mixture and mix just until no dry flour shows.

  7. 7

Fold in the oats and raisins with a spatula. The dough will be stiff.

  8. 8

Scoop 16 balls of about 3 tbsp each onto the sheets, 5 cm apart. Press each one down a little.

  9. 9

Bake one sheet at a time until the edges turn golden and the centres still look soft, 11-13 min.

  10. 10

Leave the cookies on the sheet for 5 min, then move them to a wire rack to cool.
