Sago't Gulaman Iced Drink with Brown Sugar and Pandan
6 ingredients
13 steps
What you need
- 90 g (1/2 cup) large sago pearls, uncooked white tapioca pearls
- 25 g (1 oz) unflavored gulaman powder, red or yellow agar powder
- 70 g (1/3 cup) granulated sugar, for the gulaman
- 200 g (1 cup packed) dark brown sugar, or muscovado, for the syrup
- 2 leaves pandan leaves, tied in a knot; 1 tsp vanilla extract works if pandan is hard to find
- ice cubes, for serving
Method
Restated from the original video
- 1
Bring 1 l (4 cups) of water to a rolling boil in a medium pot.
- 2
Stir in the sago and keep it at a steady boil for 20 min, stirring every few minutes so the pearls do not clump on the bottom.
- 3
Turn off the heat, cover the pot and leave the sago to soften in the hot water for 30 min. It is ready when every pearl is clear all the way through; if a white dot remains in the centre, boil 5-10 min more.
- 4
Drain the sago in a sieve and rinse it under cold running water until the starchy film is gone. Keep it in a bowl of cold water until needed.
- 5
Meanwhile, whisk the gulaman powder and granulated sugar into 830 ml (3 1/2 cups) of cold water in a saucepan until no lumps remain.
- 6
Set the pan over medium heat and bring to a boil, stirring the whole time, then let it bubble for 1 min.
- 7
Pour the liquid into a shallow square dish and leave it at room temperature until set and firm to the touch, about 1 hour.
- 8
Turn out the set gulaman and cut it into 1 cm (1/2 in) cubes.
- 9
For the arnibal, put the dark brown sugar, pandan leaves and 240 ml (1 cup) of water in a small saucepan over medium heat. Stir until the sugar dissolves.
- 10
Simmer the arnibal until it thickens slightly and coats a spoon, 5-7 min. Let it cool, then lift out the pandan leaves.
- 11
Stir the cooled arnibal into 1 l (4 cups) of cold water in a large pitcher. Taste and add a little more water if it is too sweet.
- 12
Spoon the sago and gulaman cubes into tall glasses, pour the sweetened water over them and top with ice cubes.
- 13
Serve right away with wide straws or long spoons for the pearls and cubes.
