6 ingredients
6 steps
What you need
- 1 large egg
- 650 ml (2 3/4 cups) whole milk
- 65 g (1/3 cup) granulated sugar
- 3 1/2 tbsp quick-cooking tapioca, granulated, not whole pearls
- 1 pinch salt
- 1 tsp vanilla extract
Method
Restated from the original video
- 1
Beat the egg lightly in a medium saucepan.
- 2
Whisk in the milk, sugar, tapioca and salt. Leave to stand for 5 min so the tapioca starts to soften.
- 3
Set the pan over medium heat and keep stirring until large bubbles break across the whole surface, 8-10 min. The egg is fully cooked at this point.
- 4
Take the pan off the heat right away and stir in the vanilla.
- 5
Let the pudding cool for 20 min, then stir. It thickens a lot as it cools and will look thin until then.
- 6
Serve warm, or cover and chill until cold.
