8 ingredients
7 steps
What you need
- 750 ml (1 bottle) dry red wine, fruity and not too tannic
- 1 orange, unwaxed, half sliced into rounds, half zested in strips
- 1/2 lemon, zest in strips
- 2 cinnamon sticks
- 6 whole cloves
- 1 star anise
- 1 pinch nutmeg, freshly grated
- 4 tbsp honey, or to taste
Method
Restated from the original video
- 1
Pour the wine into a large saucepan. Add the orange rounds and the orange and lemon zest strips.
- 2
Add the cinnamon, cloves, star anise and nutmeg.
- 3
Heat over medium-low heat, stirring occasionally, until steam rises and tiny bubbles form at the edge, about 8 min. Do not let it boil, since boiling gives the wine a harsh edge and cooks off the alcohol. Aim for about 75 °C (165 °F).
- 4
Take the pan off the heat and stir in the honey until it dissolves.
- 5
Cover and leave to infuse for 20-30 min, then rewarm gently if needed.
- 6
Taste and add more honey if you like it sweeter.
- 7
Strain into heatproof glasses or mugs and serve hot, each with an orange round.
