10 ingredients
8 steps
What you need
- 600 g (1 1/4 lb) large shrimp, peeled and deveined, tails on or off
- 4 tbsp olive oil
- 3 tbsp lemon juice, freshly squeezed
- 4 cloves garlic, minced
- 1 tbsp fresh oregano, leaves, finely chopped
- 1/2 tsp salt
- 1/2 tsp black pepper, freshly ground
- 8 skewers, if wooden, soaked in water for 30 min
- 1 lemon, cut into wedges
- 2 tbsp fresh parsley, chopped
Method
Restated from the original video
- 1
If using wooden skewers, soak them in water for 30 min.
- 2
In a large bowl, mix the olive oil, lemon juice, garlic, oregano, salt and pepper.
- 3
Add the shrimp and toss until every piece is coated.
- 4
Cover and refrigerate for 20-30 min. Do not marinate longer, because the lemon juice turns the flesh mushy.
- 5
Heat a grill or a ridged grill pan to medium-high and brush the grates with oil.
- 6
Thread 5-6 shrimp onto each skewer, curling each one into a loose C so it cooks evenly.
- 7
Grill the skewers for 2-3 min per side, until the shrimp are pink and opaque all the way through and just firm. Overcooked shrimp turn rubbery.
- 8
Pile the skewers on a platter, scatter with parsley and serve with the wedges.
