8 ingredients
7 steps
What you need
- 1.35 kg (3 lb) sweet potatoes, orange-fleshed, often sold as yams
- 115 g (1 stick) butter
- 100 g (1/2 cup) light brown sugar, packed
- 100 g (1/2 cup) granulated sugar
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 2 tbsp orange juice, freshly squeezed
Method
Restated from the original video
- 1
Peel the sweet potatoes and cut them into 2 cm (3/4 in) chunks.
- 2
Combine the orange juice, butter, salt, brown sugar, granulated sugar, nutmeg and cinnamon in a wide, heavy pot.
- 3
Warm over low heat, stirring, until the butter melts and the sugar dissolves completely, 3-4 min.
- 4
Add the sweet potatoes and turn them until every piece is glazed.
- 5
Cover and cook over medium heat, stirring gently every 5 min, until a knife slides into the chunks easily, 15-20 min. The sweet potatoes release juice that thins the glaze.
- 6
Uncover and simmer for another 5 min, spooning the glaze over the top, until it thickens and looks glossy.
- 7
Spoon into a warm dish with all the glaze and serve hot.
