What you need
- 280 g (2 1/4 cups) all-purpose flour, plus extra for rolling
- 1 1/2 tsp salt, plus more for the filling
- 115 g (1 stick) cold unsalted butter, cubed
- 1 egg, for the dough
- 80 ml (1/3 cup) ice-cold water
- 1 tbsp vegetable oil
- 450 g (1 lb) ground beef
- 1 large red onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp aji panca paste, or 1 tbsp sweet paprika and a pinch of chili flakes
- 1 tsp ground cumin
- 1 tsp dried oregano
- 40 g (1/4 cup) raisins
- 2 hard-boiled eggs, each cut into 4 wedges
- 8 black olives, pitted
- 1 egg yolk, beaten with 1 tbsp water, for glazing
- powdered sugar, for dusting
Method
Restated from the original video
- 1
Pulse the flour and salt in a food processor. Add the butter and pulse until it looks like coarse crumbs.
- 2
Add the egg, then the water a spoonful at a time, pulsing until the dough clumps into a ball.
- 3
Knead it briefly on a floured board, wrap and chill for 1 hour.
- 4
Warm the oil in a large frying pan over medium-high heat. Brown the beef, breaking it up, until no pink remains, 6-8 min. Spoon off excess fat.
- 5
Add the onion and cook over medium heat until soft and sweet, 8-10 min.
- 6
Stir in the garlic, aji panca paste, cumin and oregano and cook for 2 min.
- 7
Add the raisins, season with salt and simmer a few minutes until the mixture is moist but not wet. Let it cool completely.
- 8
Heat the oven to 200 °C (400 °F) and line a baking sheet with parchment.
- 9
Roll the dough out about 3 mm (1/8 in) thick and cut 8 rounds of 15 cm (6 in), rerolling the scraps.
- 10
Spoon filling onto one half of each round, leaving a clear border. Top each with one egg wedge and one olive.
- 11
Brush the border with water, fold the dough over and crimp the edge with a fork or by twisting it.
- 12
Set them on the sheet, brush with the yolk wash and bake until deep golden, 20-25 min.
- 13
Cool for 5 min, then dust with the powdered sugar and serve warm.
