- 4 large eggs
- 1 tbsp vegetable oil
- 1/2 tsp cumin seeds
- 1 small onion, finely chopped
- 1 green chilli, finely chopped
- 1 tomato, finely chopped
- 1/4 tsp ground turmeric

- 1/2 tsp salt, or to taste
- 2 tbsp cilantro, chopped
- 1/2 tsp lemon juice
Method
Restated from the original video
- 1
Crack the eggs into a bowl, add a pinch of the salt and beat lightly.
- 2
Heat the oil in a nonstick pan over medium heat. Add the cumin seeds and let them sizzle for 20-30 seconds.
- 3
Add the onion and green chilli and cook until soft but not coloured, 3-4 min.
- 4
Add the tomato and the rest of the salt. Cook until it softens to a jammy mass and oil shows at the edges, 3-4 min.
- 5
Stir in the turmeric, chilli powder and garam masala and cook for 30 seconds.
- 6
Lower the heat and pour in the eggs. Stir slowly, pushing from the bottom of the pan, until soft curds form, 2-3 min.
- 7
Turn off the heat while the curds still look a little wet; the pan finishes them.
- 8
Fold in the cilantro and lemon juice and serve hot.
