Date-Filled Semolina Diamonds Fried and Soaked in Honey
10 ingredients
12 steps
What you need
- 400 g (2 1/3 cups) medium semolina
- 100 g (3/4 cup) plain flour, all-purpose
- 115 g (1 stick) butter, melted and slightly cooled
- 1 pinch salt
- 5 tbsp orange blossom water, divided: 3 for the dough, 1 for the filling, 1 for the honey
- 400 g (14 oz) pitted dates, soft, such as medjool or deglet noor
- 1 tsp ground cinnamon
- 1 tbsp olive oil
- 1 l (4 cups) vegetable oil, for deep frying
- 250 g (3/4 cup) honey
Method
Restated from the original video
- 1
Mix the semolina, flour and salt in a large bowl.
- 2
Pour in the melted butter and rub it into the semolina with your fingertips until the mixture looks like damp sand and clumps when squeezed.
- 3
Sprinkle over 3 tbsp of the orange blossom water. Work in about 100 ml of water, a splash at a time, until the dough is smooth and soft. Cover and rest for 30 min.
- 4
Meanwhile, knead the dates with the cinnamon, olive oil and 1 tbsp of the orange blossom water into a smooth paste. If the dates are dry, soak them in warm water for 10 min and drain first.
- 5
Roll the date paste into 5 ropes, each about 30 cm (12 in) long.
- 6
Divide the dough into 5 pieces. Roll one into a rectangle about 30 x 10 cm (12 x 4 in) and 5 mm (1/4 in) thick. Lay a date rope along the middle.
- 7
Fold the long sides over the dates until they meet and pinch the seam shut. Turn the log seam side down and press it lightly flat with your palm. Shape the remaining pieces the same way.
- 8
Cut each log on the diagonal into diamonds about 4 cm (1 1/2 in) wide.
- 9
Warm the honey with the last 1 tbsp of orange blossom water and 2 tbsp of water in a wide pan over low heat until runny. Keep it warm.
- 10
Heat the oil in a deep, heavy pot to 175 °C (350 °F). Fry the diamonds in batches, turning once, until deep golden, 5-6 min. Drain on paper towels.
- 11
Slide the hot diamonds into the warm honey, turn them for 1-2 min until coated, then lift them onto a rack.
- 12
Let cool for 15 min before serving. The honey sets as they cool, leaving a crisp outside and a soft center.
