Where it comes from
Egypt, the Levant and Palestine each claim it as a national dish, and the dispute is genuine and unresolved; recipes differ enough in seasoning and legume choice to make the argument matter.
What cooks argue about
Dried chickpeas soaked and ground raw hold together and fry light; canned, already cooked chickpeas turn the mix mushy and often need flour or baking soda just to hold shape.
