Chicken Kiev
Chicken Kiev is a boneless chicken breast pounded thin, wrapped around a log of garlic butter, breaded, and fried so the butter stays liquid until the first cut releases it.

Where it comes from
Despite the name, food historians trace the technique to French cutlets stuffed with butter, adapted by Russian and Ukrainian restaurant kitchens and later marketed abroad under the Kiev name.
What cooks argue about
The technical fork is sealing the butter in tight enough that it doesn't leak out during frying, which pushes cooks toward freezing the wrapped chicken first, though some argue freezing dries the crumb coating.
