Vareniki

Vareniki are dumplings of soft dough folded around a filling, commonly mashed potato and onion, boiled until they float and served with melted butter or sour cream.

Where it comes from

They're close kin to Polish pierogi, both built on dough wrapped around a cheap filling, with Ukrainian versions leaning toward potato, cabbage, or in season, sweetened fruit.

What cooks argue about

The disagreement is over the dough: some add sour cream or egg to make it more pliable and tender, others keep it to just flour, water, and salt for a firmer bite.
