Borscht

Borscht is a beet-based soup simmered with cabbage, potato, and carrot, often with beef, its color and tang coming from the beets and a splash of acid added near the end.

Where it comes from

Its color and name are Ukrainian, though Russian and Polish kitchens claim close versions too, a point of real dispute between the countries. Beets kept well through winter, making the soup a cold-season fixture.

What cooks argue about

The fight is over how the beets are cooked: grated raw and simmered directly in the pot, or roasted and stirred in near the end, since boiling them fully leaches their color into the broth.
