Golubtsy

Golubtsy are cabbage leaves wrapped around a filling of ground beef and rice, then simmered in tomato sauce until the leaves turn tender enough to cut with a spoon.

Where it comes from

The dish spread across the former Russian Empire as a way to stretch a small amount of meat with rice and cabbage, a cheap vegetable that stored well through winter months.

What cooks argue about

The disagreement is over the cabbage: parboiling the whole head to soften the leaves for rolling, or freezing it first, which softens leaves without the risk of tearing them in hot water.
