Beef Stroganoff

Beef stroganoff is strips of beef sauteed quickly, then finished in a mustard-tinted sour cream sauce with mushrooms and onion, usually spooned over noodles or potatoes.

Where it comes from

It's named for the Stroganov family of Russian nobility, though which member and why is disputed. Its sauce reflects French technique layered onto Russian ingredients by French-trained cooks working in noble kitchens.

What cooks argue about

The disagreement is over the sour cream: stirred in off the heat so it stays smooth, or simmered into the sauce for a thicker finish, which risks the dairy breaking and turning grainy.
