Pelmeni

Pelmeni are small dumplings of thin dough wrapped around a filling of raw ground beef and pork, boiled and usually served with butter, sour cream, or vinegar.

Where it comes from

Their small size and freezability suited cold Siberian and Ural regions, where families made large batches and froze them outdoors through winter, boiling a handful straight from frozen whenever needed.

What cooks argue about

Cooks argue over the filling: raw onion mixed directly into the raw meat for a sharper bite, or onion cooked first, which softens the flavor but some think dulls the dumpling's character.
