Herring Under a Fur Coat
Herring under a fur coat is a layered salad of chopped pickled herring under grated potato, carrot, and beet, bound with mayonnaise so the beet's purple stains the top layer.
Where it comes from
It became a fixture of Soviet-era New Year's tables, built from ingredients that stayed available and affordable year-round: root vegetables, mayonnaise, and preserved fish, layered to look festive with little actual cooking.
What cooks argue about
The disagreement is whether beet goes in its own layer on top or gets mixed through: mixing stains every layer pink, while keeping it separate leaves the lower layers pale.
