Olivier Salad

Olivier salad is a diced mix of boiled potato, carrot, egg, and pickled cucumber bound in mayonnaise, with peas added for a bit of sweetness against the tang of the pickles.

Where it comes from

It's named for a chef who ran a Moscow restaurant, whose original recipe of game meat and an elaborate sauce is largely lost, replaced over decades by a simpler home version built on cheap, storable vegetables.

What cooks argue about

Cooks disagree over the pickles: sour, brined cucumbers give a cleaner tang, while sweeter dill pickles make the salad taste closer to American potato salad, a substitution purists consider wrong.
