Pirozhki

Pirozhki are small yeasted buns wrapped around a filling, here cabbage and ground beef, baked or fried until the dough browns and the filling stays tucked inside.

Where it comes from

They developed as a portable way to carry a filling meal, made from yeast dough a household would already have on hand for bread, then stuffed with whatever filling was cheapest that week.

What cooks argue about

Cooks disagree over baking versus frying: frying gives a crisper, richer crust, baking is lighter and less messy, and some cooks treat the two methods as genuinely different dishes rather than a simple substitution.
