Jamaican Patty

A turmeric-yellow pastry shell, flaky like a hand pie, is filled with spiced ground beef and folded into a half-moon, then baked.

Where it comes from

The patty developed in Jamaica from British meat pie traditions crossed with curry spicing brought by Indian indentured laborers after emancipation, giving the filling its garam masala and scotch bonnet heat.

What cooks argue about

Cooks argue over crust color: turmeric alone gives a mild yellow, while annatto or food coloring pushes it deeper orange; others fight over how much scotch bonnet the filling can hold.
