Adjarian Khachapuri
Adjarian khachapuri is a boat-shaped bread filled with melted cheese, cracked with a raw egg and a pat of butter on top right out of the oven, stirred together at the table before eating.
Where it comes from
It comes from Georgia's Adjara region on the Black Sea, its open boat shape built specifically to hold the egg and butter that get stirred into the molten cheese just before serving.
What cooks argue about
The technical fork is timing the egg: adding it early enough that the residual heat sets the white but leaves the yolk runny, since a minute too long turns the egg hard and dry.
