Where it comes from

Sweet rolls with cinnamon spread across Northern Europe through Scandinavian and German baking traditions. Immigrants carried the technique to the American Midwest, where bakeries scaled up the size and added cream cheese icing.

What cooks argue about

Bakers disagree on proofing the dough overnight in the refrigerator for a slower rise and deeper flavor, and on slicing the log with floss instead of a knife to avoid squashing the spiral.
