An enriched yeasted dough is rolled flat, spread with butter, cinnamon, and sugar, rolled into a log, sliced into spirals, and baked.

Where it comes from

Cinnamon buns trace to Scandinavia, where cardamom-spiced sweet breads were a fixture of coffee culture; Sweden later gave the bun its own holiday, Kanelbullens dag, celebrated each October.

What cooks argue about

Cooks argue over the cardamom: Scandinavian versions put it in the dough itself for a background note, while American versions often drop it entirely and rely on cinnamon alone.
