Kanelbulle
A spiced yeasted bun rolled with butter, cinnamon and sugar, twisted into shape, baked and finished with pearl sugar or a light glaze.
Where it comes from
Central to the Swedish coffee break tradition of fika, a set pause built around pastry and coffee shared at fixed points in the day, common enough that the country keeps a dedicated day for the bun.
What cooks argue about
Whether cardamom goes into the dough itself, and not only the cinnamon filling, is close to non-negotiable for Swedish bakers; versions made outside Scandinavia often drop it for a plainer cinnamon roll.
