A ring or filled piece of yeasted or cake dough, deep fried until golden, then glazed, sugared, or frosted while still warm.
Where it comes from
Fried dough rings trace to Dutch settlers in America, who fried balls of dough called olykoeks. The center hole is credited to a nineteenth century sea captain who wanted the middle to cook through evenly.
What cooks argue about
Bakers argue over yeasted dough, which needs time to proof but fries lighter, against cake batter, which is quicker, and over the oil temperature that keeps the center from turning raw or greasy.
